  • The unique menu of the Los Cabos restaurant offers a delicious tour of South American cooking traditions. Highlights include street foods like empanada criollas (Argentine beef empanadas) and grilled specialties such as fish and banana, Peruvian-style roasted chicken or wagyu picanha (rump cap). 
  • Humo’s Candil Agave Bar celebrates Mexico’s vibrant culture, offering locally inspired cocktails and more than 100 agave-based spirits. Savor a tasting flight of smoky mezcal or try one of the bar’s masterfully crafted signatures.

The Chef

  • With a foundation in Peruvian cuisine, chef Jeffrey Liu Rodríguez Román got his start at Lima’s esteemed D’Gallia Gastronomic Institute before working at illustrious local restaurants, including the pioneering cebichería La Mar.
  • Eager to explore the wide world of South American and Caribbean cuisine, the talented chef moved to San Juan, Puerto Rico, where he helmed the kitchens of upscale eateries like BLT Steak and the Ocean Bar & Grill at The Ritz-Carlton, San Juan.
  • Rodríguez Román later led the kitchen of The Ritz-Carlton, Santiago in Chile, showcasing his passion and versatility. In 2019, he became the sous chef of Zadún’s X (Equis) waterfront Mexican restaurant, revamping the menu to highlight fresh local produce and seasonal seafood.
  • Today, the seasoned chef brings his diverse culinary background to Humo, where the breadth of his South American cooking experience is on full display.
