Named for Hawaii’s state fish, the seafood-focused venue specializes in fresh catch accompanied by locally sourced ingredients.

The eclectic Tihany-led redesign at Humu — the often-used nickname for the restaurant — blends classic Hawaiian elements with vintage charm to reflect the island’s natural beauty. An open-air layout seamlessly blends the dining room with its stunning location floating in a lagoon overlooking the water. An infusion of natural materials like koa wood and lava stone enhances the venue’s tropical ambiance. Under a thatched roof, the circular glass-topped bar doubles as an aquarium with fish swimming about, and a nearby glass case houses the live daily catch. An expansive lanai provides unobstructed views of the Pacific, creating a breathtaking backdrop for sustainably sourced seafood paired with island sunsets.

  • Humu is dedicated to sourcing its seafood from eco-friendly local fisheries. Partners include Big Island-based Blue Ocean Mariculture for farm-raised fish and Tropic Fish Maui for sustainably caught seafood.
  • Service is a standout at Humu, where an oyster sommelier stands ready to recommend a bivalve to suit your tastes and knowledgeable bartenders can recommend a cocktail to pair with your snapper.
  • Presentation is no afterthought at the Maui restaurant. Vegetarians can indulge in a beautifully plated “seacuterie” board featuring fresh local produce, housemade seasonal jams, grilled bread and butter with Maui sea salt, while seafood lovers can enjoy grilled prawns served tableside on hot lava rocks.
  • Hawaiian ingredients take center stage across the newly revamped menu. Bread service is an ube brioche served with liliko’i (passion fruit) butter, shrimp cocktail comes with a fried caper yuzu aioli and olive-poached flounder gets a dose of macadamia nut brown butter sauce.
  • While the food is certainly a highlight, the lagoon setting and views are the standout features of Humuhumunukunukuāpuaʻa. Request a table on the lanai to catch uninterrupted vistas of the gorgeous Maui sunset.

The Bar

  • An aquarium filled with vibrant coral and small tropical fish serves as the bartop, putting a fun twist on the tiki bar concept.
  • The Maui restaurant’s bar program also received a refresh with a menu spotlighting local spirits. Drinks inspired by Hawaiian flora and the island’s tradition of tiki-style cocktails go down even better with those Maui sunsets.
  • Expect colorful libations like the Mai Kai (light and dark rums, orange curacao, macadamia orgeat, lime and dry pineapple cordial) and the Old Fashioned on a Vacation (whiskey, pineapple liqueur, honey and Australian barrel-spiced bitters), both made with Hawaiian spirits.
  • Humu’s master sommelier has curated a collection of wines sourced from coastal regions to complement the venue’s seafood-forward offerings. Be sure to ask for a recommendation to enjoy a perfect pairing.
  • Beer offerings are all locally sourced from Maui Brewing Company, with the exception of one lager procured from Big Island-based Kona Brewing Company.
