The experience begins with three appetizers served at the kitchen bar, where you can interact with the culinary team while awakening your palate. A seven-course formal seated meal, including a pre-dessert and dessert paired with wine or juice, follows. Desserts are served on the terrace, accompanied by an aperitif cart and views of the beach and property. As the sun sets, Teodoro transforms into an exclusive dining experience that invites you to discover its delicious charms.

The Food

  • Chef Alexis Valera’s passion for local ingredients is evident in his dishes, which feature items such as escamoles(also known as Mexican caviar, it’s edible larvae and pupae of ants), mezcal, jackfruit, local lime varieties and local pumpkin.
  • Traditional Mexican cuisine is reflected in the reinterpretation of mole and tamales.
  • The first course is a fragrant creation featuring regional citrus and flowers, habanero gel and caviar, served with a salad of distinct garnishes — an ideal introduction to open the taste buds.
  • Several dishes on the menu feature various types of mushrooms, reflecting their seasonal flavor and balancing the robust Mexican spices and ingredients. These mushrooms, which flourish in Mexico during the rainy summer season, complement the dishes beautifully.
  • The pre-dessert and desserts deviate from traditional Mexican options, instead showcasing local fruits like jackfruit, prickly pear and pitaya, alongside chile, grasshopper sugar, cacao nibs and passion fruit.
