The Chef

  • Chef Man brings more than three decades of Cantonese cooking experience to the kitchen at the Shanghai restaurant, adding his own contemporary take on the recipes he knows so well.
  • The talented toque was introduced to Cantonese cuisine by his grandfather, a renowned dim sum chef in Shanghai. His grandfather emphasized the importance of mastering these traditional cooking techniques.
  • Chef Man gained further experience under the mentorship of chef Chan Yan-Tak while working at Singapore’s renowned Cantonese eatery Fu Lin Men. The quality expected by the venue’s high-caliber clientele greatly influenced the rest of Man’s culinary career.
  • Both his grandfather and his mentor instilled in Man the importance of seasonality and preserving the natural flavor by cooking in innovative ways. These principles continue to guide his approach to modern-meets-traditional Cantonese cuisine.
